C'est un type spécifique de fermentation qui crée de l'acide lactique, des enzymes et des probiotiques, entre autres. Tout est question de sel, d'eau et de légumes. La saumure d'eau salée crée un environnement anaérobie (sans oxygène) où seules les bactéries lactobacilles peuvent survivre. Les bactéries Lactobacillus agissent comme un conservateur, empêchant les bactéries nocives de vivre dans le ferment.

Dating back to around 6000 BCE, Lactofermentation is one of the oldest forms of food preservation in the world.
 
It is a specific type of fermentation that creates lactic acid, enzymes and probiotics, among other things. It's all about salt, water and vegetables. Saltwater brine creates an anaerobic (oxygen-free) environment where only lactobacilli bacteria can survive. Lactobacillus bacteria act as a preservative, preventing harmful bacteria from living in the ferment.

Ainsi, le terme «lacto» dans la lactofermentation se réfère en fait à cette production d'acide lactique, et non de lacto comme dans le lactose du lait.

Une fois le pot ouvert, nos produits dureront 21 jours, mais comme il s’agit d’une fermentation naturelle, le produit peut facilement se conserver plus longtemps. Nous conseillons de garder le chou sous la saumure dans le pot après service. Utiliser des ustensiles propres lors du service et garder le pot toujours au frais.

Once the jar is opened, our products will last 21 days.  However, as this is natural fermentation, the product can easily be stored for longer. We recommend keeping the cabbage under the brine in the pot after serving, using clean utensils when serving, and always keeping the jar refrigerated when not eating.

MA SAUMURE EST PASSÉE DE CLAIRE À TROUBLE. / IS IT OK IF MY BRINE WENT FROM CLEAR TO CLOUDY?

Il est normal que votre saumure devienne un peu trouble pendant la fermentation, tout cela fait partie du processus. Il peut se développer le même phénomène dans le pot mais à plus petite échelle. Par contre, si une odeur anormale et une texture plus différente se forme, il se peut que le pot ne soit plus frais. Nous ne suggérons pas de consommer le pot.

It is normal for your brine to become a little cloudy during fermentation, this is all part of the process. The same phenomenon can develop in the jar on a smaller scale. On the other hand, if an abnormal odor or a different texture forms, the jar may not have become too warm at some point. We suggest NOT consuming the jar..
